This black soup from Pemalang (Central
of Java) is very similiar to Rawon soup from East of Java. The
different is that it uses Tauco paste, and sprinkled with grated
coconut. This side dish is perfect match for rice.
Ingredients:
- 400 gr beef, (i used jarret de boeuf)
- 2000 ml water for boiling
- 1 tsp salt
- 2 stalks of lemongrass
- 6 kaffir limes leaves
- 4 Indonesian bay leaves
- 2 tbs oil
Ground spices
- 2 shallots
- 3 cloves of garlic
- 1 tsp of turmeric powder
- 1 tsb of keluak paste
- 3 candelnut pecan
- 2 tsb fermented soybean paste (Tauco)
- 1 tsp sugar
garnishings:
- fried shallots
- dry-fry grated coconut
- choped spring onions
- Boil the beef in a pan, add salt, lemongrass, kaffir, bay leaves, continue cooking until the meat turns tender, oozed, then cut into cubes, and put back into the pan. Let it cooked.
- Heat oil in a skilet, sauté the ground spices. Add a tsb of beef stock, stirr. Turn off heat, and add the paste into the beef pan. Bring to boil before simmering for several more minutes.
- Serve in a bowl, sprinkle with garnishings.
