Chicken and Pineapple Curry


Ingredients:
  • 300 gr chicken filet, cut
  • 1 cup of cut pineapple
  • 1 tbs fish sauce
  • 1 tps palm sugar (or white sugar)
  • 200 ml coconut milk
  • 1 tbs cooking oil

Spices:
  • 6 bird eyes chillies
  • 1 lemon grass sliced
  • 1 tsp cumin
  • 1 tsp shrimp paste
  • 1 tsp grains of coriander
  • 1 tsp galangal
  • 3 fresh kaffir leaves, shredded
  • a pinch white pepper
  • 3 garlic, chopped
  • 1/2 onion sliced thinly

Direction :
  1. In a pan, stir fry all the spices with cooking oil, reduce greatly the fire, and put the lid of the pan. Let cook for 3-5 minutes.
  2. Add the chicken and pineapple, and cover the pan once again to let the chicken cooked.
  3. Add fish sauce, and coconut milk, stir well..let shimmer for 10 minutes.
  4. Servir sans attendre, to be eaten as accompagnion of rice.
